Rosie’s Voodoo Pecan Pie

Ingredients

  • 3/4 cup light brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 tablespoons all-purpose flour

  • 1 tablespoon half and half

  • 1 teaspoon vanilla extract

  • 1/3 cup butter, melted

  • 1 cup pecans, finely chopped

  • 1/2 cup semi-sweet chocolate chips

  • 1/2 cup peanut butter chips

  • 1 unbaked 9 inch pie crust

Directions

Preheat oven to 375° degrees.

In a large bowl mix together brown sugar, granulated sugar, and flour. Beat in eggs, milk, vanilla and melted butter. Pour into prepared pie crust; sprinkle pecans, chocolate chips and peanut butter chips evenly over pie. Bake 35-40 minutes or just until center is set. Cool completely on a wire rack.

Yields 8 servings

Athena’s Magic Dog Treats

Athena comes from a long line of Great Danes that are infused with magic called Guardians. Guardians were bred to stand beside, and protect, the witches they were destined to bond with. She grew up in Germany in the 1600s, but after many hundreds of years traveled to modern New Orleans, La to meet her own special witch. She can often be found in the Quarter with her person, Rosie. When not eating lucky dogs in Jackson Square, she is off chasing ghosts in the courtyard. She is fierce and will protect those she loves at all costs. Directions

Preheat oven to 300° degrees, lightly grease baking sheets; set aside.

Combine wheat germ, flour and rolled oats in a large bowl. Add peanut butter, oil, egg and water. Mix all ingredients together (I found if you do this with your hands or in a food processor it is much easier). On a lightly floured surface, roll out dough to 1/4 inch thick and cut with cookie cutter. Place biscuits on prepared baking sheets and bake for 40 to 45 minutes. Turn off oven, but leave biscuits inside until crunchy, at least 1 hour. Store biscuits in an airtight container for up to 2 weeks.

1 1/2 cups whole wheat flour

1/3 cup rolled oats

1/2 cup all-natural peanut butter

2 tablespoons oil

1 egg

1/2 cup water

Yields 40 biscuits

*Lately I’ve found many books are featuring man’s best friend, and being a dog lover I only felt it was right that they received their own special recipe. This recipe does not contain chocolate and is meant to be for animal consumption.
